In 2008, we were looking for a new and creative solution to protect our precious egg layers. After a good bit of research, we learned that guineas are known to create a lot of noise and scare away potential unwanted visitors, alarming chickens that they need to seek shelter.
To make a long story short, a mink got the best of our new found guardians and we were down to just one guinea. As a family, we collectively decided that it was in everyone’s best interest to eat our last guinea for dinner. Unexpectedly, the result was a tender, lean and juicy meat full of flavor, which turned out to be one of the most delicious meals we had all year. It was at this time we decided we should add guineas to our lineup of gourmet birds.
A short while later we had 125 guineas on the farm, making plenty of noise as they roamed the pasture, providing excellent meals for our CSA members and customers. For several good reasons, the guinea is a personal favorite here on the farm.

This was exactly what was missing when buying food, living in Chicago the past several years, getting to see where our food comes from. What we appreciate most about Applecheek Farm is how it is unconditionally open to the community. ~ Riviello Family
